本研究主要是針對餐旅相關科系的學生,進行餐旅倫理議題重要性認知之調查,以提升學生未來在就業市場中的軟實力,並為校園餐旅倫理相關課程提供參考。 本次調查係採用便利抽樣問卷調查法,共發出問卷767份,回收問卷683份,得有效問卷634份。 本研究共分析634位全台各地餐旅相關科系的學生對餐旅倫理議題重要性認知的調查,獲致以下結果:(一)餐旅倫理課程對重要性認知有顯著影響、(二)工作與實習經驗對餐旅倫理重要性認知有正面影響,但影響有限 、(三)因此,只有學校的餐旅倫理課程效果最顯著。 經過本次調查結果顯示,餐旅倫理議題非常值得研究,未來可持續朝向餐旅相關業者進行調查,以利臺灣餐旅倫理研究的完整性。 

The study focused on the importance of hospitality ethical issues. In order to develope students' soft skills and provide guidelines to hospitality ethical curriculum developement, questionnaire was carried out. A total of 767 questionnaires were sent out to five colleges and universities with F&B program. The survey collected 683 copies of questionaires, while 49 incomplete questionaries were deleted, which results in a total of 634 usable questionnaires. Major conclusions are as followed: (1)hospitality ethical curriculms made a distinctive effect on the perceptions of hospitality ethical importance, (2)work and internship experience had positive effect on the perceptions of hospitality ethical importance, but not significant, and (3) only hospitality ethical curriculums is the most effective methods to develop students ethical value concepts. As a result, it is recommnened to further examine hopitality ethical issues. As this research only examined hospitality students' perceptions, future research can further examine hospitality practitioners' perceptions to have a wholesome understanding of hospitality ethics.
